Clash between depth and speed

I like the game and also theres lots of tips and help provided to keep me on track.
What I find difficult getting used to is the game keeps going when Im doing stuff like finding a new person to hire or sell beer. I spent the first 4 years doing practically nothing but read and process a whole bunch of data (because everythings supplied with walls of text). Later I found the pause button, and I always had to remind myself to press it. Otherwise beer might be completed and takes over the screen when Im trying to figure out something.
Also I think there are too many things going on in general. Recipes look complicated and mice are distracting. Notification centre?
